Instead of being surrounded by Singapore's busy streets and towering buildings, you can enjoy your meal while looking out towards lush greenery and garden views. The atmosphere makes it easy to slow down and simply enjoy your food.
The buffet brings together a wide variety of Asian and international dishes, so there is something for different tastes. Seafood, meats, and freshly prepared dishes are served across the buffet stations, while the open display kitchen lets you see some of the cooking action as it happens. For the Smoke & Char Collection, the carving station and Josper Grill become the stars of the buffet. The chefs use a combination of applewood, lychee wood, and charcoal to bring out a smoky aroma and deeper flavour from a rotating selection of prime meats.
One of the highlights is the Argentinian Asado-style Grilled Black Angus Côte de Boeuf with Smoked Onion, available from Thursday to Saturday evenings. Another standout is the 12-Hour Applewood Smoked Wagyu Beef Oyster Blade, where slow cooking allows the meat to develop a deeper and more indulgent flavour.
The carving selection also includes Texas-style Hickory Black Angus Beef Short Ribs and Brazilian Churrasco Young Lamb Leg, giving diners plenty of choices if they want to explore different styles of roast and grilled meat in one meal.

The Smoke & Char experience isn't only about meat. Seafood also gets its moment on the grill, with a selection of regional seafood incorporated into the buffet. Dishes such as Barramundi en Papillote and Balinese-style grilled fish bring different Asian flavours to the table while keeping the seafood as the main attraction.
The seafood selection also rotates, so there can be something different to discover on another visit. Depending on the day, you may find options ranging from half-shell scallops to banana leaf-wrapped fish and seafood skewers.
One dish that stands out is Peppermint's Signature Seafood and Lobster Laksa Tower. Combining the richness of seafood with the familiar spicy and aromatic character of laksa, it offers a deliciously indulgent option for anyone who loves Southeast Asian flavours.

While fire and charcoal are the main themes of the Smoke & Char Collection, the experience doesn't stop at the grill. The buffet also explores the art of wok hei, often described as the "breath of the wok." It is that distinctive smoky and slightly charred flavour that comes from cooking ingredients over high heat.
At Peppermint, this technique can be found in rotating stir-fried dishes, including Wok-fried Crab or Tiger Prawns. These can come in different preparations, including Singapore-style chilli and Sarawak white pepper, allowing diners to experience different flavour profiles throughout the collection.
The claypot selection takes a slower approach to cooking. Dishes such as Signature Fish Maw in White Pepper Chicken Collagen Soup, Old-school Cantonese Seafood Congee with Gingko Nuts and White Fungus, and Honey Soy Baked Fish with Taiwan Eggplant showcase how gentle, patient cooking can create comforting and layered flavours.

There is also a little piece of Peppermint's greenery incorporated directly into the food. Several sauces and flavoured salts are made using fresh herbs harvested from the restaurant's Urban Farm, adding a fresh touch to the buffet experience.
Among the housemade accompaniments are Peppermint Chimichurri and Peppermint Cucumber Tzatziki, both given an aromatic lift with fresh peppermint from the Urban Farm. There is also a selection of flavoured salts, including Dukkah Sea Salt, Cumin and Szechuan Pepper Sea Salt, and Masala Sea Salt.
These small additions may seem simple, but they give diners the freedom to add another layer of flavour to their dishes. Whether you're pairing them with grilled meats, seafood, or other buffet favourites, they make the dining experience feel a little more personal.
